  1. Prepare a water bath: fill the bowl with soft cream cheese, butter and milk. All the ingredients should be warm. Mix them with silicone spatula until the mass is smooth. Then put the bowl on the table and leave it to cool down.
  2. When the mass is cool, add vanilla and yolks into the bowl. Then add 10 ml. of lemon juice and mix everything.
  3. Now sift all dry ingredients through the sieve. Mix wheat flour and cornstarch. Add salt. Slowly add these ingredients into the bowl with cream mass. Mix it slowly, using a whisk. There shouldn`t be any lumps.
  4. Then whip egg whites and sugar. Whites should be cold. In this case it`s much easier to whip them. You should start whipping with a mixer and then slowly add small portions of sugar.
  5. Now slowly add whipped eggs into the main bowl. Use silicone spatula to mix everything well. As a result, you should have smooth and thick mass.
  6. Find a baking form and prepare it. Lubricate the bottom and edges and cover them with baking paper. If you have the form with low bumpers, edges of paper should be higher than the bumpers.
  7. Pour the dough into the form and put it into the oven. Bake it for 50 minutes at 320 degrees.
  8. Here is one secret you may use while cooking. Make a kind of a water bath. Pour water into the tray. Put it into the oven and then put the form with cheesecake on the upper grid.
  9. When your dessert is ready, get it out the form. Get rid of baking paper and leave cheesecake to cool down.
  10. Then put this dessert into the fridge for a half an hour. However, it`s better to leave this dessert in the fridge for the whole night. 11. Finally, dust your cotton cheesecake with sugar powder.
