Italian Ciabatta Bread


I want to share with you another recipe of tasty bread. We`ll cook homemade ciabatta. Main ingredients used for cooking such a dish are flour, water, salt and yeast. Some people like to add olive oil. My recipe is one of the simplest. So, you`ll need a minimal set of ingredients.

What`s more, you do not need to work with the dough. All you need to do is to mix all the ingredients and wait.

Another interesting Italian dish is stirato. This bread has something in common with ciabatta. The only difference is the amount of water and flour used. When you cook ciabatta, you need to use more water, so the dough is liquid. As for stirato, the dough is much thicker. Both of these recipes are equally great.

So, let`s get down to cooking traditional ciabatta.

  1. Prepare all the ingredients.
  2. Sift the flour through the sieve and mix it with dry active yeast in the bowl.
  3. Make a hole in the middle of flour mass.
  4. Mix all the ingredients, using a spoon. The dough shouldn`t be smooth.
  5. Cover the bowl with plastic wrap. Stick it with the toothpick in several places for the dough to “breathe”. Leave it for 12-15 hours. If you`re going to bake ciabatta next morning, cook this dough in the evening.
  6. In the morning you`ll see that the mass is bigger in size and covered with bubbles. Try not to spoil it.
  7. Cover the table with the thick layer of flour and pour there your liquid dough.
  8. Now fold it several times. Start with the distant edge and move to the one that is closer to you. Next time do the opposite.
  9. Then work with the sides, trying to form a square.
  10. Cut the dough in two or tore it.
  11. Take a piece of baking paper or the towel and cover it with the flour. If you skip this step, the dough will stick to the surface. Put both pieces of the dough on this surface, trying to elongate it.
  12. Form a “crib” for ciabatta bread. Brace it with towel rolls from both sides. Put one more roll in the middle of the dough, to separate it in two parts. Cover your ciabatta with the towel and leave it for an hour in the warm place.
  13. As the dough was too liquid, it won`t grow in size. However, your would-be-ciabattas will get their round form. In 40 minutes start heating the oven.
  14. We`ll cook this bread on the water bath. Put wide pan, filled with hot water on the bottom shelf of your oven. It will boil and fill the oven with the steam. Bake ciabatta bread at 425 degrees for 30-35 minutes. Wait for 10 minutes and take the pan with water out of the oven. Continue cooking without the steam.
  15. When your bread is ready, take it out of the pan as well and leave it on the grid to cool down. Wait for 20 minutes and enjoy the taste of homemade Italian bread.

Though the recipe is rather easy, you`ll be surprised by it`s perfect taste!
