Italian Bellini. Classical Alcoholic Drink for Parties

Still, classical Bellini recipe is the most famous in Venice. Unlike most of the cocktails, this one has rather famous author. Giuseppe Cipriani invented it in 1930s, when he owned famous Harry`s Bar. To surprise the visitors, he decided to mix mashed peach with prosecco and wine. This drink has become popular very quickly. Giuseppe also invented the carpaccio recipe – raw beef, served with the tender sauce.

First, this drink was served in summer, when it was the season of picking up peaches. Later the problem with season fruit was served. If you want to cook this tender drink at home, you`ll need to find white peaches. If you cannot do it, go on with the ordinary yellow fruit.

Instructions:
  1. Wash the peach and peel it. Wash the flesh one more time. Then you`ll need to mash it or rub the bright mass through the sieve.
  2. If mashed peach is too sour you`ll need to add sugar to taste.
  3. Put the bowl with the mashed peach into the fridge for an hour.
  4. Fill the shaker with the ice, wine and this tender mashed fruit. Mix everything carefully and pour the drink into the cocktail. Strain it carefully for the cocktail to be light.

In fact, if you want to cope with the process quicker, use ordinary peach juice. Mix it with ice and wine and enjoy the taste. It is very light and yummy.

If you do not like alcoholic drinks, you may replace wine with the water with gas. Another interesting idea is to replace the peach with the ripe melon. For those who prefer hard liquor, we recommend to mix vodka with the wine.
