Hungarian Gulyas. Thick Nutritious Soup with Cream
“Gulyas” is the traditional Hungarian dish, famous all over the world. It`s something in the middle between stew and thick soup. This dish consists of onion, beef, potato and paprika. In fact, cooks tend to change this classical recipe. However, today we`ll look at the classical one.

For cooking this dish, I recommend you to choose tender beef. You may even buy special sliced pieces. In this fact, it will be easier for you to cope with the process of cooking.
Melt butter in the bowl. Peel onion and chop it. Add it into the pan with the preheated butter. Cook it, stirring everything constantly, until the vegetable is ready.
Wash beef; get rid of the extra fat. Cut it into pieces. Add salt and paprika. The colour of the meal depends on the amount of the paprika added.
Add beef into the pan with fried onion and cook everything for 2-3 more minutes. Do not wait for too long, otherwise your meat will be caramelized.
Pour liquid into the pan with beef and onion. It may be either water or bouillon. Cover the pan with the lid and continue stewing until it`s really soft. It will take about 0.5 – 1.5 hours.
Peel potato and cut it into the middle sized cubes. You may also cut it into long strips, if you like.
As soon as the meat is ready, add potato into the pan. If the dish seems to be too thick for you, you may add more liquid, or even tomato paste.
However, I prefer to use fresh ripe tomato. Peel it and chop it.
Boil this thick soup until potato is half-ready. It will take about 20-25 minutes.
When the dish is ready, pour it into the bowls and enjoy the taste.
