Bright orange sea bass can be bought in most local grocery stores or markets. This fish is very versatile and can be prepared in a variety of ways: you may bake fish or stew, fry or grill it. It tastes good with most garnishes. Sea bass baked with tomatoes and onions makes for a nice lunch or dinner. Let`s look at the sea bass fillet recipe and get to know how to cook it!

Instructions:
  1. If you’re using frozen sea bass, defrost it beforehand. To do so, it is best to leave it in the fridge overnight. In the morning, you should peel the fish and wash carefully.
  2. Mix salt with pepper, cilantro, nutmeg and ginger. Grind these ingredients into a dust.
  3. Rub the fish with all these spices. Add 2-3 bay leaves and sprinkle everything with lemon juice. Add a glass of white wine. Leave everything to marinate for an hour. An hour later, turn the fish over and leave it to marinate for another hour.
  4. Peel the onion and cut it into thin slices. Fry it in the pan with 2 tbsp of olive oil. Cook the vegetable until it’s soft. Next put it into an empty bowl.
  5. Put tomatoes into the pot with hot water for several seconds, and peel away the skin. Cut the flesh of the tomato into thin slices.
  6. Chop up the herbs. Take the fish out of the bowl with the marinade and wipe it clean, using paper towels. Do not get rid of the fragrant liquid.
  7. Coat the fish in flour and put it on the preheated pan filled with 1/3 cup of olive oil. Cook it until it has a nice crunchy crust on both sides.
  8. Next, reduce the heat and stew the fish for 5 more minutes.
  9. Lubricate a dish with olive oil. Put half of the vegetables at the bottom of the dish. Add chopped herbs and garlic. Now add half of the fried onion. Salt everything and add pepper if you like.
  10. Cover the fish with the rest of the ingredients. Pour marinade on the top of this dish. Bake the sea bass in the oven for 35-40 minutes.
