Homemade Hummus with Garlic and Spices

 Classical homemade hummus is tasty, but sometimes, you want something more than that. In this case, you can enrich the taste with garlic and spices. It will give this dish creamy texture and light smoky flavor.

 You may think that garlic will spoil the taste of this Middle Eastern dish with its strong flavor. However when you roast it, it totally changes the taste and become the best ingredient for hummus with its neutral taste.

Instructions:
  1. Preheat the oven to 400 F.
  2. Cut the top of each garlic head. You do not need to peel it before baking. Put garlic cloves into the tray, covered with the tinfoil.
  3. Sprinkle it with the olive oil. Fold garlic with the edges of the garlic. Bake it for 30-40 minutes.
  4. Now you can peel garlic. All the cloves are already soft. Transfer them to the bowl of the food processor.
  5. Add boiled chickpeas. Pour in water and fresh lemon juice. Stir in tahini, salt and pepper. You can also add 1 teaspoon of sumac.
  6. Mash everything carefully. If you want to make the texture of this dish smoother, add more water. You can also control the amount of spices used.
  7. Put hummus into the bowl and sprinkle it with olive oil. Add chopped parsley on the top of the portion.

 You can serve this dish tipped with crumbled feta cheese, roasted pine nuts or sesame seeds. Garlic hummus tastes great with crunchy homemade bread, tortillas, fresh vegetables or crostini. It is very tasty! Bon Appetit!
