  1. First, you need to cook a syrup. There is nothing difficult in this process. Fill small bowl with hot water; add sugar and citric acid.
  2. Cook this mixture on the slow fire, waiting until the sugar disappears. Don`t forget to stir everything constantly.
  3. When this mass starts boiling, cover your pan with the lid and continue cooking until it`s golden-yellow.
  4. Take the pan off the fire and leave it to cool down.
  5. Mix baking soda with 1 teaspoon of cold water and add it into the bowl with cool syrup. In several minutes it will remind you liquid honey. It will be light-yellow and odourless.
  6. Take a separate pan and fill it with gelatine and 100 ml. of hot water. Leave it for several minutes to swell up.
  7. Then put this pan on the fire and heat, stirring constantly.
  8. You shouldn`t let this mixture boil.
  9. Pour melted gelatine into the clean bowl.
  10. Mix the rest of water with sugar and syrup.
  11. Put this sweet mixture on fire and boil it.
  12. When the temperature of this mass is 230 degrees, you may start slowly whipping it with mixer. Add gelatine into the bowl and continue whipping quicker.
  13. When this liquid mass turns into froth, you may add colours and flavours.
  14. When the mass is really thick, it means that our homemade marshmallow is finally ready.
  15. Cover the tray with baking paper and dust with sugar powder, mixed with starch. Pour your sweet mass into this tray. Flatten the surface and put the tray in the cold place for several hours.
  16. Then dust this sweet layer with the mixture of starch and sugar powder again.
  17. Cut it into squares and roll in the powder.
  18. It`s recommended to eat this homemade dessert as soon as possible. However, if there are leftovers, you may put them into container with the lid and store in dry place.
