Instructions:
  1. Whip vegan butter with a powerful mixer. Add organic cane sugar and brown sugar. Mix everything carefully. Add tender pumpkin puree and vanilla. Beat everything for one more minute.
  2. Now it's time to add the dry ingredients. Stir in flour baking powder, baking soda and salt. Do not overmix the batter.
  3. Add non-dairy milk. We recommend using almond milk to give this dish a nice flavor. If the batter seems to be too liquid, add more flour.
  4. Cover the bowl with plastic wrap and leave it in the fridge for 45 minutes.
  5. Preheat the oven to 350 F. Cover a baking tray with parchment.
  6. Take the bowl with the dough out of the fridge. Form small balls and flatten them or roll the dough and form nice cookies, cutting out nice shapes. Freeze the cookies for 10 minutes before you get down to baking them.
  7. Transfer the cookies to a tray and bake them for 10 minutes. Then you need to remove the tray from the oven and leave your cookies to cool down.
  8. In the meantime, you can prepare a healthy frosting.
  9. Beat vegan butter in a large bowl until it is airy and fluffy. Then you should add vanilla and powdered organic sugar. Mix everything until the mass is creamy enough. If you want, you may sprinkle everything with one teaspoon of non-dairy milk.
  10. All you need to do now is to cover each cookie with the frosting and enjoy the taste.
