Instructions:
  1. To begin with, mash oats using a powerful grinder. Mix this oat flour with all-purpose flour.
  2. Add baking soda, a pinch of salt and fresh vegetable oil. Mix everything carefully.
  3. Whisk an egg and add it to the dry ingredients. Preheat the frying pan with the leftovers of the oil. Cook this large oat pancake from both sides for 3-4 minutes.
  4. Now you need to prepare the filling. Cook hard-boiled eggs beforehand. Heat frying pan with olive oil. Add chopped onion. Cook it for 2-3 minutes for it to become soft. Stir it from time to time. In 2 minutes you can add chopped mushrooms. Fry mushrooms for 5-7 minutes.
  5. Mix fried mushrooms with chopped tomatoes and parsley. Add fresh ground pepper.
  6. Cut mozzarella into thin slices. Mix everything one more time.
  7. Fill the pancake with this mass and form tight roll.
