Green Soup with Sorrel

Traditionally this Russian soup is made with meat meat - desc learn more..., cabbage and tomatoes. However, today we`ll take a look at the summer version of this dish. It is fresh, yummy and easy to cook. If you cannot buy sorrel or just do not like its taste, you can replace it with spinach or add some other herbs.

Instructions:
  1. First, cook light chicken broth. Add 2 chicken legs to the pan with 2 l of water. If you like, you can get rid of the skin and cut of the leftovers of fat.
  2. Bring the liquid to boil. Add 2 bay leaves. Cook everything for 30 minutes.
  3. Wash potatoes and peel them. Cut each one into small cubes. Add potatoes to the pan and cook for 10-12 minutes.
  4. Chop onion and grate carrot on the coarse grater. Heat the frying pan with the vegetable oil. Add onion and cook it until it`s soft. Add grated carrot and saute everything for 3 more minutes.
  5. Add veggies to the pan with soup.
  6. Cook hard-boiled eggs.
  7. Chop the sorrel and add it to the pan with green soup as well as spring onion. Add salt and pepper to taste and cook everything for 3-5 minutes.
  8. Cut each egg in 2 pieces.
