Green Forest Cake with Pomegranate


This green spinach  cake is traditional polish dessert. It`s famous as “Lesny mech” in Poland. There are several ways to cook this dessert. Likewise the Red Velvet Cake, it made be cooked with the classical food dye or it`s natural alternative.

I prefer to share with you healthy recipes. That`s why today we`ll try to cook simple green cake, using frozen spinach and the rest of natural ingredients.

There are several small secrets you`ll need to know for cooking really amazing dessert.

·         Defrost spinach before cooking and get rid of the extra liquid. The rest of the ingredients should be warm as well, so I recommend you to prepare them before getting down to cooking.

·         Be careful while taking the sponge cake out of the form. It`s very tender, so you shouldn`t spoil it`s form.

·         Do not throw away the leftovers of the cake. You may use crumbs for decorating the dessert. Keep in mind that spinach sponge cake is rather wet. So, take one layer and leave it for it become dryer. Crush it with your hands or a knife. Never use blender for crushing the dough. In this cake you`ll form a thick ball in the bowl.

·         For decoration the dessert you may also use berries. The best recommendation is to use pomegranate seeds. They won`t spoil the texture of the cake as they are not wet. Moreover, combination of green and red colours always looks great.

  1. Preheat the oven to 356 F. Cover the bottom of the form with the thin layer of baking paper and lubricate the edges with the butter.
  2. Fill the sieve with the defrosted spinach. Mash it carefully, getting rid of the extra liquid. Put this green mass into the bowl of the blender. Add lemon juice. Mash everything one more time.
  3. Add melted butter into the bowl of the blender and continue whipping.
  4. Take a separate bowl and whip eggs with the sugar until the mass is smooth. It shouldn`t be white.
  5. Add spinach into the bowl with the eggs and whip everything one more time.
  6. In the separate bowl, you should combine the flour, baking powder and soda.
  7. Combine dry and liquid ingredients. Whip everything one more time until the mass is green and smooth. Fill the form with this dough. Bake it in the preheated oven for 40-45 minutes. Check whether the dough is ready, using a wooden toothpick.
  8. Take the form out of the oven and turn it. Leave it on the grid for the sponge cake to cool down.
  9. Meanwhile you`ll have some free time to cook the cream. Fill the bowl of the blender with the mascarpone cheese. Whip it carefully until the mass is very tender. Add sugar powder and lemon juice into the bowl. Continue whipping.
  10. Cut your sponge cake into thin layers. Leave one of them alone. You`ll use it later for decorating the cake. Soak the rest of the layers with the small amount of cold green tea.
  11. Now let`s get down to forming the cake. Cover the first layer with the tender cream. Add pomegranate seeds. Cover everything with the second layer. Repeat the same process.
  12. Then you`ll need to lubricate the top and the edges of the cake with the leftovers of the cream.
  13. Crush the last layer of your green cake and use these crumbs together with the pomegranate seeds to decorate this delicacy.
  14. Leave the cake in the fridge for 8 hours.

Your cake with spinach is ready! Take it out of the fridge before serving and leave it for an hour. It should be warm. In this cake, the dessert will be much tastier.
