Instructions:
  1. Start cooking these cottage cheese pancakes by whisking egg whites. You do not need to use yolks. Store them in the fridge. As for the whites you need to whisk them carefully with a whisk or a mixer. This mass in the bowl should be white and foamy.
  2. Now slowly stir in cottage cheese. Add sugar, flour, baking powder, salt and ground cinnamon.
  3. Get down to frying pancakes. Sprinkle the bottom of the frying pan with the vegetable oil of cooking spray. Form small cottage cheese pancakes on the surface of the pan. Cook each one for 1-2 minutes from both sides.
  4. When you`re done, get down to cooking delicious orange syrup. It`s also very easy to do. Add maple syrup to the small sauce pan. Add star anise and cloves as well. Now grate zest of one small orange and squeeze its juice. Add both ingredients to the pan.
  5. Bring the sauce to boil. Reduce the heat and simmer everything for 10 more minutes. When you`re done, drain the sauce and get rid of the star anise and cloves.
  6. Serve a batch of cottage cheese pancakes with this delicious sauce.

You can also serve them with orange butter.  To cook it, you need to melt butter in the saucepan, mix it with maple syrup, brown sugar and 1 tsp of water. Cook everything for 3-4 minutes. Leave it to cool down and put the bowl with this butter into the fridge for 1-2 hours.
