Instructions:
  1. Start making this birthday cake with the most difficult part. Cook the dough. Take a large bowl and mix the dry ingredients in it. Combine baking powder, baking soda, cocoa powder, flour and salt.
  2. To make this dessert more fragrant and give it a rich chocolate taste, mix strong coffee with melted chocolate.
  3. Use a powerful mixer to beat butter. It should be very smooth and airy. Add sugar and continue whipping everything. Add 4 egg yolks and vanilla. Whip everything until the mass is smooth.
  4. Mix this white mass with chocolate. Slowly stir in buttermilk and the dry ingredients.
  5. Beat 3 egg whites in a separate bowl. When they are thick enough, add them into the bowl with the batter.
  6. Preheat the oven to 350 F. Cover a baking tray with parchment. Transfer the batter into it. If you have several pans, you can cook all three layers at a time.
  7. Bake everything for about 30 minutes. Take each pan out of the oven and leave them to cool down. It will take about 15 minutes. Now you can transfer them to the large plates and set aside.
  8. In the meantime, you can prepare the frosting. It is not that easy either. First, you need to bake pecans. Put them on a baking dish, covered with parchment and cook in the oven, preheated to 350 F. It will take 7-9 minutes.
  9. Mix sugar with milk and 3 more egg yolks with soft butter, a pinch of salt and sugar in the pan. Cook, stirring constantly for 2-3 minutes. Leave to cool down as well. Add chopped pecan nuts and vanilla to taste.
  10. When both frosting and cake are cold, you can form your dessert.
  11. Cover each layer with the creamy frosting. Later cover the edges and the top with the leftovers of the cream. If you like, you can decorate the dessert with crushed nuts or chopped chocolate.

Leave this chocolate German cake in the fridge for 3-4 hours. You can store this dessert for 2-3 days in the refrigerator.

 Tips & Tricks to make this dessert better:

  •         Do not over-whip the eggs so that the dessert is airy.
  •         For the cake to be even, you should flatten each layer before forming your dessert.
  •         Have no buttermilk in the fridge? Replace it with the mixture of whole milk with 2 tbsp of lemon juice.
  •         You can replace pecans with walnuts.
  •         To make this dessert even better, use more frosting!
