Instructions:
  1. Before you get down to cooking, fry eggplants or bake them in the oven. I prefer to use the oven: in this case, the dish is much healthier. So, you need to slice eggplant into thin layers. You do not need to dust the slices with salt, as baked vegetable won`t be bitter.
  2. Lubricate the tray with the vegetable oil and put eggplants into it. Cover the slices with the silicone brush.
  3. Bake eggplants in the oven at 392 degrees for 10-15 minutes. Then put them on the big plate and leave to cool down.
  4. Meanwhile you can cook the filling. Cut onion into cubes. Take pepper and get rid of the seeds. Cut it into cubes. Pour vegetable oil into the pan and preheat it. Add vegetables and cook them until they are soft.
  5. Then you need to put all these veggies into the bowl of the blender. Add lemon juice to make this filling really fragrant. Add nuts, garlic, parsley, salt and black pepper.
  6. Mash everything. There should be smooth mass in the bowl.
  7. Cover the slices with the filling and form tight rolls. You may stick them with toothpicks if you like.

These rolls may be a perfect snack or appetizer. Decorate them with fresh parsley and serve.
