  1. Before you get down to cooking the dish, prepare the kitchenware. Choose a large glass dish, wash it and wipe it carefully.
  2. Put the meat into this large dish and pour cold water into it. It should cover the meat. Leave everything in the dish with the salty water for 10-14 days. If the pieces of meat are rather small, leave them in the dish for 7 days. Don’t forget to clean the salty water and turn the meat over from time to time. It also shouldn’t be too warm in the room.
  3. Next, strain the water and cut off the top of the skin. Wash it carefully. Tie the meat with some thick string, used for cooking. If you want the meat to have the crunchy crust, cover it with some maple syrup or with a mixture of mustard and honey.
  4. Put the meat into the dish and bake it at 428 F for 30 minutes.

If you like the meat to be more fragrant and spicy, rub it with the mixture of dry garlic, thyme and black pepper. Serve this meat with the vegetables or use as the main ingredient while cooking sandwiches.
