Instructions:
  1. Before you get down to cooking the dish, prepare the kitchenware. Choose a glass form of the huge size, wash it and wipe carefully.
  2. Put the meat into this large pan and pour cold water into it. It should cover the meat. Leave everything in the pan with the salty water for 10-14 days. If the pieces of meat are rather small, leave them in the pan for 7 days. Don’t forget to clean the salty water and turn the meat over from time to time. There should be also not to warm in the room.
  3. Later strain the water, cut of the top of the skin. Wash it carefully. Tight the meat with the ropes. If you want the meat to have the crunchy crust, cover it with the maple syrup or the mixture of mustard and honey.
  4. Put the meat into the form and bake it at 428 F for 30 minutes.
