Instructions:
  1. Chop onion and garlic carefully. Tore or chop mint as well. If you like smooth soups, you can blend all the ingredients.
  2. Preheat olive oil in the small saucepan. Add all chopped ingredients into it.
  3. Cook everything for 3 minutes. All the ingredients should become soft.
  4. Now pour in vegetable broth. Add peas. Bring the liquid to boil and simmer everything fro 15-20 minutes.
  5. Pour the soup into the bowl of the food processor and blend until smooth. Your cream soup is ready, sprinkle it with salt, pepper and olive oil.

  •         For cooking this soup you can use any type of onion. It may be white, red or shallot onion. Each type of onion gives the dish new and interesting flavor. If you want to make the taste deeper, caramelize onion. Cook it slowly over low heat for 20-40 minutes before adding the rest of the ingredients.
