French Soup with Caramelized Onion

  1. Take 4 large yellow onions and 2 sweet onions. Peel them and cut into slices.
  2. In the pot with the thick bottom, melt butter slowly. Add onion rings to the pan. Mix everything for the onion to be covered with melted butter.
  3. Cook onion over the low heat for an hour. Stir if from time to time for the onion not to burn. When it`s soft, extremely fragrant and has nice golden-brown color, pour in dry white wine.
  4. Simmer everything for 2-4 minutes.
  5. Pour in 4 cups of beef broth and 1.5 cup of the chicken broth. Add bay leaves and fresh thymes.
  6. Cover the pan with the lid and cook for 40-45 minutes.
  7. When your soup is almost ready, preheat the oven to 350 F. Cut French bread into slices. They also shouldn`t be too thin.
  8. Sprinkle each slice of bread with olive oil. Transfer bread slices to the tray covered with the parchment. Add grated hard cheese on the top of each slice. Bake everything for 5-7 minutes until cheese melts.
  9. Now let`s get back to our soup. Remove thyme and bay leaves out of the pan. Add salt and pepper to taste.
  10. Serve it in the bowls together with crunchy cheesy bread.

 It`s also a good idea to serve this French dish with a glass of a good wine. Onion soup like most of creamy soups can be served with both red and white wine. 

  • As we use beef stock for cooking this dish, you can easily pair your soup with red wine. The best choice is Gamay wine. One glass of fruit wine tastes great with rich flavorful soup with onion. Choose classical Beaujolais wine and enjoy this mixture of flavors.
  • White wine also tastes great with this French soup. You can choose the same whine you`ve used for cooking the soup. To surprise your friends of better half with, serve a bowl of French onion soup with Pinot Gris.
