Instructions:
  1. Make yeast dough. To do it, you need to mix 2 teaspoons of yeast with 2 tablespoons of sugar.
  2. Add 100 ml. of warm water and leave the yeast for 5-10 minutes.
  3. For cooking this Italian bread we need to sift the flour through the sieve.
  4. Mix it with salt.
  5. Now add yeast mixture into the bowl with wheat flour. Then add 200 ml. of water and fragrant olive oil. I prefer to use Extra Virgin oil.
  6. Make the dough elastic and soft. First of all, use silicone scapula, when it gets thick, continue mixing with your hands.
  7. Put the dough into the bowl and cover it with plastic wrap. Leave this bowl in some warm place for an hour. It should grow bigger in size.
  8. Then use this dough to form little balls. There should be about 15-17 pieces.
  9. Fill each ball with mozzarella and olive. I prefer to put more filling, so that the focaccia is much tastier.
  10. Put all these balls on the tray, lubricated with butter. Leave them for 15 minutes. You may also cover the tray with tinfoil.
  11. Then get rid of the foil and lubricate focaccia with ketchup or any other sauce and put grated cheese on the top of it.
  12. Bake it for 30 minutes at 392 degrees. Bake until the focaccia is ready and cheese turns into golden fragrant crust.
