Fluffy Pancakes With Kefir
Hello. Today I am cooking fluffy pancakes with kefir. If you are not familiar with buttermilk, you should know that it has a nice thick creamy texture that makes baked goods tender. I`ll tell you about the easiest way of cooking melting and soft pancakes.
Note: You can replace the flour with pancake powder. You can make your own buttermilk. Just add one tablespoon of white distilled vinegar, cider vinegar, or lemon juice to one cup (240 ml) of milk. Let this mixture stay 5 to 10 minutes before using.

Pour kefir in a bowl, add 40 ml of water. Mix and warm slightly. Note: warm kefir is the best for cooking fluffy pancakes.
Take another bowl and mix 1 egg, salt and sugar.
Combine the mixture with warm (not hot) kefir and mix until there is the foam.
Add the sifted flour gradually in two or three steps.
Stir very well. The dough should be homogeneous and thick. Note: if the dough not thick, add the extra flour.
Add baking powder and mix. Note: add baking powder at the end.
Pour the oil into the frying pan and heat it well.
Put the dough on the pan with a tablespoon and form pancakes with the back of a spoon.
Fry the pancakes from both sides in medium heat for about 2-3 minutes.
