Eggplant rolls with different kinds of filling may be perfect snack. You may eat them all year round. Buy 1-2 eggplants and several more ingredients for the filling. This snack is both simple and not expensive.

· Eggplants – 2 pieces
· Champignons – 4 and 2/3 cups
· Onion – 1 piece
· Vegetable oil – 150 ml.
· Butter – 2 tsp.
· Hard cheese – ¾ cup
· Basil – 1 sprig
· Salt – to taste
· Black pepper – ¼ tsp.

1. Wash eggplants and cut off the edges. Cut vegetables into thin slices.
2. Fill deep bowl with cold water and add salt. Put eggplant slices into it. Leave vegetables for 20 minutes in order to get rid of bitter taste.
3. Put eggplant slices on the paper towel and dry them. Fry these slices on the frying pan, covered with vegetable oil. Slices should be fried from both sides.
4. Wash champignons and cut them into cubes. Fry these cubes.
5. Cut onion into cubes as well.
6. When mushrooms are almost ready, add chopped onion and 1 piece of butter into the pan.
7. Mix all these ingredients while cooking. Add hard grated cheese.
8. Add salt and pepper. You may also add chopped basil into the pan, as it will make the dish fragrant.
9. Put this filling on the one edge of the slice. Start forming a roll.
10. Stick them with toothpicks and decorate with greens.

Eggplant rolls with cottage cheese and nuts

Here is one more interesting recipe of vegetable rolls. I suggest you to use smooth cottage cheese, walnuts, garlic and fresh greens. This combination of ingredients is spicy, unusual and very yummy. Your family members and guests will like this snack!


· Eggplants – 2 pieces
· Vegetable oil – 50 ml.
· Smooth cottage cheese – ½ cup
· Walnuts – 1/3 cup
· Parsley and dill – 1 small beam
· Garlic – 1-2 cloves
· Mayonnaise – 2 tbsp.
· Black pepper – 1 pinch
· Salt – to taste.

1. Wash eggplants and cut off the tails. Cut them into long thin slices. Each one should be about 0,1 inch.
2. Put these slices into the deep bowl and salt them. Leave veggies for 15 minutes.
3. Then you need to wash these slices and dry, using paper towels. Cover frying pan with the small amount of oil and fry slices from both sides until they are golden yellow.
4. Place these fried vegetables on the paper towel in order to get rid of extra oil. Mash walnuts using blender or rolling pin. Wash greens and chop. Take a separate bowl and fill it with cottage cheese, chopped greens and walnuts.
5. Add mashed garlic, mayonnaise and black pepper.
6. Mix all the ingredients until the filling is smooth.
7. Fill fried slices with this mass and form rolls. If you want them not to fall apart, stick rolls with toothpicks.
8. Decorate this snack with greens and put into the fridge for an hour to cool down.
If you want your eggplant slices to be softer, roll them in the egg mass before frying.

Eggplants, combined with tender melted cheese and Korean carrot are spicy and juicy. In order to make this dish tastier, I recommend you to use pulpy tomatoes. As for the carrot, you may buy it in the supermarket or try to cook this Korean dish at home.


· Eggplants – 1-2 pieces
· Korean carrot – 1/3 cup
· Tomato – 1 piece
· Melted cheese – ½ cup
· Vegetable oil – 4 tbsp.
· Mayonnaise – 2-3 tbsp.

1. Wash eggplants, cut off the edges. You do not need to peel vegetables. Cut them into thin slices and bake until they are soft.
2. You need to lubricate the tray with vegetable oil before cooking. In order to make eggplants juicy, cover each slice with the small amount of oil as well.
3. Bake veggies at 392 degrees for 15 minutes.
4. Now it`s time to cook the filling. Grate melted cheese. Mix it with mayonnaise until smooth.
5. You do not need to add garlic, as yummy Korean carrot is rather spicy ingredient. When eggplant slices cool down, cover them with cheese mass. Leave one edge empty and place on another edge slice of tomato and carrot.
6. Form rolls and stick them with toothpicks.
7. Decorate them with greens.

Rolls with tomatoes and cheese

This is one more classical recipe of eggplant rolls. If you`ve never tried to cook such a snack, here is a short instruction.


· Eggplants – 3-4 pieces
· Vegetable oil – 100 ml.

For the filling:

· Soft cheese – 1 and ½ cup
· Mayonnaise – 1/3 cup
· Garlic – 1-2 cloves
· Tomatoes – 2 pieces
· Boiled eggs – 2 pieces
· Salt – to taste.

1. When I tried to cook this dish for the first time, I found out that they are too fat. That`s why I suggest you to bake them instead of frying. In this case the dish won`t be too fat.
2. First, cut eggplant into thin slices.
3. Lubricate these slices and the tray with olive oil, using a brush.
4. Your movements should be fast, as the slices will absorb oil.
5. Preheat the oven to 356-392 degrees. Bake slices for several minutes.
6. Take the tray out of the oven and leave your veggies to cool down.
7. Grate boiled eggs and cheese. Mash garlic.
8. Mix these ingredients in the bowl.
9. Cut tomatoes into thin slices. If they are juicy, get rid of the core.
10. Lubricate each slice of eggplant with thin cheese layer.
11. Put tomato slice on the edge of each slice and form rolls. Put them into the deep bowl. The “stitches” shouldn`t be seen.
12. Decorate these rolls with greens, sliced vegetables, pomegranate seeds.

· Eggplants -2 pieces

2. Put these slices into the bowl, filled with cold water in order to get rid of bitter flavour. Leave them for 15-20 minutes.
3. Dry them on the paper towel and fry until they`re golden-yellow.
4. Put fried slices on the paper towels. Start cooking the filling. Grate hard cheese.
5. Wash chicken fillet and get rid of extra fat. Put it into the pan and fill it with water. When it starts boiling, get rid of the froth. Cook chicken for 20-25 minutes for it to be juicy enough. Cool poultry down. Then cut it into cubes. Add them into the bowl.
6. Salt and pepper these ingredients. Add mayonnaise and mashed garlic.
7. Mix everything well. Put fried slices on the cutting board.
8. Place one tablespoon of the filling on the edge of each slice. Add one sprig of fresh basil.
9. Form rolls. Decorate them with basil and slices of chilli pepper. You may also stick each roll with the toothpick.
If you want to save your time, boil chicken fillet beforehand. You may use broth later for cooking soup or sauce. As for the slices, they may be baked. In this case, the dish will be healthier. One more healthy idea is to replace mayonnaise with fat sour cream or homemade sauce.

3. Preheat the oven to 374 degrees and bake eggplants for 15 minutes. Meanwhile you need to prepare all the ingredients. Fry pumpkin seeds on the dry pan. Then chop them.
4. Separate leaves and stems of parsley. Wash leaves, dry and chop.
5. Grate hard cheese.
6. Now, when eggplants are baked and the filling is ready, lubricate each slice with mayonnaise and cover with crushed seeds.
7. Add the layer of chopped parsley.
8. Then make the layer of grated cheese.
9. Put Korean carrot on the one edge of the slice.
10. Form tight rolls and stick them with the toothpick.
