Eggplant Rolls With Different Fillings

  1. Wash eggplants and cut off the edges. Cut vegetables into thin slices.
  2. Fill deep bowl with cold water and add salt. Put eggplant slices into it. Leave vegetables for 20 minutes in order to get rid of bitter taste.
  3. Put eggplant slices on the paper towel and dry them. Fry these slices on the frying pan, covered with vegetable oil. Slices should be fried from both sides.
  4. Wash champignons and cut them into cubes. Fry these cubes.
  5. Cut onion into cubes as well.
  6. When mushrooms are almost ready, add chopped onion and 1 piece of butter into the pan.
  7. Mix all these ingredients while cooking. Add hard grated cheese.
  8. Add salt and pepper. You may also add chopped basil into the pan, as it will make the dish fragrant.
  9. Put this filling on the one edge of the slice. Start forming a roll.
  10. Stick them with toothpicks and decorate with greens.
