Instructions:
  1. Preheat a large frying pan with a thick bottom. Pour in oil. To cook classic gumbo, use canola oil.
  2. Take chicken thighs. They should be skinless and boneless. Cook them in the frying pan until poultry is light brown.
  3. Remove the chicken from the pan. Leave it to cool down and shred it carefully.
  4. Take a large pot. Add the leftovers of the oil into it. Fill it with chopped onion and celery. Peel green pepper and cut it into thin slices. Cook vegetables until they are soft. It will take about 4-5 minutes. Add minced garlic and cook vegetables for 1 more minute.
  5. Reduce the heat. Add roasted tomatoes, vegetable broth and tomato sauce. Simmer everything for several minutes. Don’t forget to add spices and herbs to taste. Add shredded poultry.
  6. Take the pan with the leftovers of the fat and stir in flour. Whisk everything constantly, cooking for 3-5 minutes.
  7. Pour this mass into the pan to make the soup richer, add boiled rice and hot Louisiana sauce. Cook everything over low heat for 5 more minutes.
