Diet Cheesecake


This delicacy is yummy, unusual and healthy at the same time. Instead of the dough layer, we use oatmeal. In combination with soft cottage cheese, it makes this dessert great for those who are eager to lose extra pounds. In order to add some sweetness, I suggest to use honey. And don`t forget to make this pastry fragrant by adding a bit of cinnamon.

  1. First, mix agar-agar with water. Take 0,07 ounces of agar-agar, add water and leave it for 40 minutes. I prefer using agar-agar, but you may replace it with gelatine. For cooking diet cheesecake you need to take 0,3 oz of gelatine.
  2. Meanwhile, peel one apple. You need about a half of a fruit.
  3. Mix oatmeal with apple using blender. Mash ginger.
  4. Fill the bowl of your blender with cinnamon, lemon zest, ginger and one raw egg. Mix all these ingredients with oatmeal and apple.
  5. Find tray with high bumpers and cover it with baking paper. Put oatmeal dough on it. Try to form high edges.
  6. Bake it for 20 minutes at 356 degrees.
  7. Meanwhile you may cook cheese mass. Put cottage cheese into the bowl of the blender.
  8. Get the juice of one orange. Mix the pulp with cheese.
  9. Add ½ of the honey into the bowl and beat this cheese mass up with the blender.
  10. Pour orange juice into the bowl and mix everything until smooth.
  11. Use mixer to whip egg whites well.
  12. Preheat the pot with agar-agar on the oven, stirring constantly.
  13. Combine it with whipped cheese, egg whites and mix it again, using blender.
  14. Take the oatmeal dough out of the oven and cover it with the rest of honey. I use silicone brush for it. Then cover it with the thick layer of cottage cheese mass.
  15. Put this healthy cheesecake into the fridge for 3 hours.
  16. When the time comes, you may start decorating it. Dust the surface of the cake with lemon zest.

You may also decorate your dessert with fresh berries, nuts or fruits. If you want your cake to be sweeter, add more honey. Still, do not add too much sweetener, as it`s high in calories.
