Diabola with Salami, Olives and Peppers
Diabola with salami is traditional thick Italian pizza. It`s usually served with sausages, tomatoes, cheese and the best olive oil you can find. There is no one time-tested recipe. The one I want to share with you is good enough. This pizza is cooked with olives and pepper, so you`re sure to like it.
However, you may experiment with the recipe and change something. Actually, you may use any season ingredients you like.

To begin with you need to prepare the dough. Yeast dough is very easy to cook. If you want to cook classical Diabola, the dough should be thick. Leave it for several minutes and wait before covering it with the toppings. You may even cover the dough with the towel.
Now you need to work with toppings. Cut salami into thin circles. The best variant is to buy sliced salami in the supermarket.
Take salami out of the pack and grate on the coarse grater. You need to grate hard cheese as well. I recommend you to mash it using the blender. Then cut tomatoes in halves and get rid of the seeds.
Cut hot pepper in two and get rid of the seeds as well. Cut it into thin strips. Cut olives into halves. Tore basil.
Now you may get down to forming pizza. Preheat the oven to 356 degrees.
Cover the dough with tomato sauce. I recommend you to cook homemade sauce instead of buying ketchup. It`s quite easy. All you need is to stew tomatoes (fresh or marinated), pepper, salt, herbs and a pinch of nutmeg. Cook this sauce for 5-7 minutes in the pan, covered with the lid.
Decorate everything with basil leaves and slices of salami. Dust it with 2-3 pinches of dry oregano.
Add tomatoes and olives.
Finally, cover everything with grated cheese and sprinkle with olive oil.
Bake pizza for 20 minutes. Then take the tray out of the oven and decorate it with fresh basil leaves.
Cut pizza into 6 or 8 pieces and serve. Bon Appetite!
