Summer is the season of fresh fruits, berries and light desserts. Here is the simple recipe of yoghurt cheesecake. Try it and it will become one of your favourite summer recipes. You`ll love this combination of tender soufflé, whipped cream and amazing sponge cake. Mix these ingredients with fresh strawberry, and you`ll create perfect summer dessert. You don`t need to finish cake decorating courses in order to create this delicacy, which is worth being sold in one of the best cafes. Instructions:
  1. First, you need to cook sponge cake. It won`t be difficult. Find a deep bowl. Separate yolks and whites and whip the whites only. Slowly add sugar into the bowl. The mass should be smooth at the end. Add yolks and continue whipping for 2 more minutes.
  2. There should be smooth yellow mass in the bowl.
  3. Now find another bowl and fill it with the dry ingredients. Mix baking powder, starch and flour in it. Sift this mixture through the sieve and add to the eggs mass. If you add the flour slowly, your sponge cake will be amazingly soft.
  4. Take the form and cover it with baking paper. It should have high bumpers. Fill this form with the dough and start baking your sponge cake.
  5. Use silicone spatula to make the surface of the cake smooth.
  6. Preheat the oven and bake your sponge cake at 356-375 degrees for 25-30 minutes. Then take the form out of the oven and leave your sponge cake to cool down.
  7. Now mix gelatine with hot water and leave it for several minutes. You`ll need 80 ml. of hot water.
  8. Put cottage cheese into big bowl. If you have a blender, use it to mix cheese. Otherwise, you may rap it through a sieve. Then use a fork to mix cottage cheese with sugar and yoghurt.
  9. Since I use sweet strawberry yoghurt, I do not add much sugar. Nevertheless, if you use natural yoghurt, you may add more sugar.
  10. Wash strawberry. Leave it to dry and then mix with sugar powder. Use blender to mash it and make nice and smooth strawberry mass. Leave it for several minutes too.
  11. Fill sauté pan with cream and heat it for several minutes. Mix it with gelatine, preheated in the microwave oven. You should pour it slowly into the sauté pan. Use spatula to mix these ingredients. When the mass is ready, divide it in two parts. Mix 2/3 of it with cottage cheese mixture. The rest of gelatine mixture should be added into the bowl with whipped strawberry.
  12. Now it`s time to form cheesecake. Cover the form with plastic wrap. Put sponge cake on the bottom of it. You should cut the top of it beforehand.
  13. Then pour cheese mass on the top of sponge cake. There should be free space for mashed strawberries.
  14. Put this cake into the fridge for 1,5 hours.
  15. Then take it out of the fridge and add strawberry mass. If it is a little thick, use water bath to melt it. Pour it into the form with cold cheesecake and put it into the fridge again. Now you need to leave it for at least 4 hours.
  16. One more part ,that is important, is decoration of the cake.
  17. Melt dark chocolate on the water bath. Wash the rest of strawberry and cut each berry in two. Fill the pastry bag with the chocolate. Decorate strawberries to make them look like the small ladybugs.
  18. Take the cake out of the fridge and use these strawberries to decorate your dessert.
