Instructions:
  1. Take a large saucepan and add vegetable oil into it. Add chopped onion.
  2. Wash all the vegetables carefully, cut them into pieces and add into the pan as well. Add dry thyme and chopped parsley.
  3. Sauté everything for 10 minutes.
  4. Now you can add vegetable stock. Bring the soup to boil. Reduce the heat and simmer the soup for 20 minutes.
  5. Turn off the heat and leave the soup for 5 minutes in the pan, covered with the lid.
