Instructions:
  1. To begin with, preheat the oven to 400 F. Cover baking tray with the parchment.
  2. Take a middle-sized bowl and mix sugar with flour and salt. Set the bowl with dry ingredients aside.
  3. Pour warm water into the pan. Add melted butter. Bring everything to boil. Take the pan out of the oven and pour the liquid into the pan with the flour. Mix everything one more time. The dough shouldn`t be too thick. Now it`s time to add whisked eggs to this mass.
  4. The dough will be smooth enough. Fill pastry bag with this mass. For 10 eclairs on the tray covered with the parchment. Bake them for 15 minutes in the preheated oven. It is important not to open the oven while baking your dessert.
  5. Reduce the heat to 350 F. Continue baking eclairs for additional 20 minutes.
  6. Open the oven and leave your eclairs to cool down.
  7. In the meantime cook pastry cream. Whisk 4 egg yolks with sugar. Stir in cornstarch. Whisk everything carefully. Set the bowl aside.
  8. Fill a large saucepan with warm milk, Add vanilla and heat everything for several minutes.
  9. Allow this liquid to cool down. In 10-15 minutes pour this liquid into the pan with egg mass. Whisk everything, combining all the ingredients well.
  10. Pour everything back into the saucepan and heat the custard one more time. Do not let this mass boil!
  11. Remove the pan from heat. Leave it too cool down one more time. Add soft butter and mix everything one more time. Pour the custard into the plastic container and leave it to cool down in the fridge.
  12. In 10-20 minutes you can get down to filling your eclairs. Make 3 holes in each éclair. Fill pastry bag with the custard. Fill each éclair with this tender mass until they are full.
  13. Finally you`ll need to make the glaze. There are a lot of recipes for the toppings. Today we`ll take a look at the traditional recipe of chocolate glazing. Melt chocolate in the microwave oven or over the water bath. Stir in heavy cream. Mix everything carefully and heat everything one more time.
  14. Finally, use this tender mass to cover each éclair. Transfer the tray with your eclairs to the fridge. Leave them to cool down completely,
