 It has rather interesting history. Original dessert was created by a cook, who actually spoiled the dish. He took the tray out of the oven to early and the cakes were half-liquid inside. This dessert reminded the cook of the volcano with the hot lava. So, he decided, that it`s rather good idea to serve such a delicacy.

Instructions:
  1. To begin with, I`d like to mention that it`s important to use qualitative chocolate while cooking. Only in this case, you`ll get perfect molten cakes with the dark liquid stuffing. The only one minus is that such a dessert is rather bitter. You can solve this problem, serving cakes with the sweet ice-cream. However, if you still want your dessert to be sweeter, use dark chocolate with 50-60% of cocoa. Avoid using milk chocolate. Using one big bar, you`ll be able to cook 4-6 lava muffins. The amount of cakes depends on the size of the forms used.
  2. Prepare all the ingredients. Take eggs out of the fridge beforehand for them not to be too cold. If you like, you may also put eggs into the bowl with the warm water.
  3. Crush chocolate into small pieces. Add butter. Melt everything on the water bath or in the microwave oven. Be careful and do not overcook this mass. Stir chocolate liquid each 10-20 seconds. If it`s too hot, leave it to cool down.
  4. Take a separate bowl and whip eggs with the salt and sugar in it. Mix everything until smooth. You may use fork, whisk or mixer for this purpose.
  5. Mix cold chocolate mass with the whipped eggs. This mousse shouldn`t be hot.
  6. Sift the flour through the sieve and add in into the bowl with the rest of ingredients. Mix everything until smooth.
  7. If you are going to use silicone forms, cover them with the thin layer of butter. As for the ceramic or metal forms, they shouldn`t be lubricated. All you need is to dust them with the thin layer of the flour and cocoa powder. Pour the chocolate mass into the 4 or 6 forms. Put them into the oven, preheated to 392 F. Bake your tender dessert for 7-10 minutes.
