Instructions:
  1. First, make the topping. Whisk 2 eggs in the small bowl. Fill 2 another bowls with breadcrumbs and flour.
  2. Wash an eggplant. Cut both edges of each vegetable. Slice it into thin rings. Dip each ring into the bowl with whisked eggs. Then do the same with the flour and breadcrumbs.
  3. Preheat oil in the pan. Cook eggplants from both sides for 2-3 minutes. When you`re done, transfer them to the plate, covered with paper towels to access extra oil.
  4. Now get down to forming the snack. Cover each slice of the eggplant. Cover it with tender cream cheese. If you like, you can use goat cheese or ricotta instead.
  5. Add basil leaves and salad leaves. Top everything with the slices of tomatoes.

If you like, you can use another ingredients while cooking this snack. Add cucumbers, mushrooms, bell pepper or even top everything with some yummy sauce. You`ll love the result. Bon Appetit!
