Instructions:
  1. This black bean soup recipe is very easy to cook. Slowly heat oil in a pan over a medium heat. Peel the onion and cut it into thin semi-circles. We recommend you using shallot onion. Cook it for 2 minutes until the oil is fragrant enough. Add slices of carrot. Sauté them for 3 more minutes. Add mushrooms.
  2. Add salt, pepper and chopped fresh thyme. You can replace it with a mixture of dry herbs if needed. Stir everything carefully; wait for 2 minutes. Pour red wine into the pan and cook everything until the liquid disappears.
  3. In the meantime, open the can with the black beans and add them into the bowl of the food processor. Mash them turning them into a black puree.
  4. Add this creamy dark mass into the pan with the soup. Pour in vegetable broth, mixing it with the rest of the ingredients. Simmer your soup for 5 minutes.
  5. Finally, add kale and cook the soup for 10 more minutes over a low heat.

You’re done. Serve this soup hot. You can cover it with a thick layer of grated cheese.
