Cottage Cheese Pancakes with Semolina


I like to cook pancakes for breakfast, as they are delicious, healthy and able to fill me with positive energy for the whole day. Pancakes with semolina are very popular in my family. Hope you`ll like them too.

  1. Break two eggs and whip them, using a fork.
  2. You do not need to whip them for too long. Just make this mass smooth.
  3. Add 3 tablespoons of semolina. If you use big eggs, add more semolina (3,5-4 tablespoons).
  4. Mix eggs with semolina and leave this mass for several minutes.
  5. Mash cottage cheese. You may even use low-fat cheese. However, in this case, pancakes will be too dry. By the way, if you use dry cottage cheese, you`ll need to add less flour.
  6. Mix semolina and cheese.
  7. Try to make this mass smooth. Now you need to add sugar and salt.
  8. Add raisins and mix everything one more time. There shouldn`t be lumps in the bowl.
  9. Now start adding flour. Do it slowly. Add 1 part of it and mix everything. Do it until the mass is thick enough.
  10. Don`t forget to sieve the flour through the sieve together with baking powder.
  11. If the dough is too thick, you won`t like the taste of pancakes. Liquid dough won`t satisfy you as well. So, follow my instructions and use enough ingredients.
  12. Now it`s high time to start forming pancakes. Use only your hands to form small balls. Put them on the surface, covered with the thin layer of flour.
  13. Try to form cheese balls as quickly as possible. In this case, you won`t need much flour and your pancakes won`t fall apart while cooking.
  14. Pour vegetable oil into the pan and preheat it. Put pancakes into the pan, slow down the fire. Cover your pan with the lid.
  15. Fry them from both sides. When your cheese pancakes become golden-yellow, you may turn off the fire. Wait for 10 minutes before taking them out of the oven. It will help you to make your pancakes perfect.

How to make perfect pancakes:

  •         Chose the main ingredient carefully. Cottage cheese shouldn`t be vet or liquid. I recommend you to choose cheese with 5-9% fat content. If it`s too fat, put it into the strainer and leave for 25-30 minutes to get rid of extra liquid.
  •         One more thing is that it shouldn`t be granulated cottage cheese. If you have no alternative, mash it using a powerful blender.
  •         Try to use less sugar while cooking this dish. I recommend you to use only one pack of vanilla sugar. In this case, pancakes will be both sweet and fragrant. If you use sugar, pancakes may burn while cooking.
  •         If you want to eat something sweet for breakfast, serve them with jam, condensed milk or syrup. One more idea is to add raisins while cooking this dish.
  •         You shouldn`t use too much flour. Add it slowly and control the process. As soon as the dough is thick enough, stop adding the flour.
