You must have heard of the simple dish named polenta. It is very simple, so a lot of people wonder why it`s so popular in Italy. In the 17th century it became popular among lower social classes, as corn was both affordable and yummy enough. There were a lot of ways to cook polenta. Cooks boiled, baked and used it as the basic ingredient for creating nutritious dinners.

 Later, rich people started to include this healthy meal into their meals as well. Since then, ready-made polenta is a popular restaurant dish. Instructions:
  1. Before beginning the cooking process, you’ll need to find a pot with a thick bottom and edges. Fill it with water and add salt. Boil the liquid. Add corn, stirring everything constantly. Then lower the fire and cook the polenta for 30-40 minutes. At the end of this process, the mass in the pot should be a bit sticky.
  2. Put this mass on the table and form a circle or a square. Leave the thin layer to cool down.
  3. In the meantime you can cook the sauce. To begin with, peel the onion and chop it. Grate carrot. Put tomatoes into the bowl with the boiling water for several seconds. Then take them out of the bowl and peel the skin. Cut the tomatoes into big cubes. Chop the cilantro and garlic. Melt half of the butter. Mix it with the vegetable oil. Pour this mixture into the frying pan. Add onion and fry it until it’s soft. Then add the carrot. Later, add chopped tomatoes, tomato sauce and water. Stew everything for several minutes.
  4. Add garlic, cilantro, salt and pepper. Melt the rest of the butter in the frying pan. Add the flour and milk. Mix everything one more time and allow it to boil. Next add two types of grated cheese, paprika and salt. Cut the polenta into pieces. Put them on separate plates and serve with a portion of the sauce. Decorate such a meal with some fresh cilantro.

Polenta is a very tasty dish. It can be served with meat, mushrooms, vegetables and fish. Serve it hot or cold. In both cases it will be really delicious. Bon Appetite!
