Colorful Vegetable Stew for Cold Evenings


When there are a lot of vegetables in your fridge, you may use them for cooking amazing bright stew. In fact, you may combine all the vegetables you like in your pan. For it to be comfortable to cook such a dish, you should stew all the ingredients in the deep pan with the thick edges and bottom.

For cooking tender stew you`ll need to choose fresh vegetables. The more ingredients you`ll use, the tastiest dish you`ll cook.

  1. Wash eggplants and peel them, getting rid of the skin. Put them into the plate and cook in the microwave oven for 7-8 minutes. When you take the pan out of the oven, the vegetables will be baked.
  2. Repeat the same process with red bell pepper.
  3. Peel carrot and onion into pieces. Peel chili pepper. Get rid of the seeds. Cut it into small pieces.
  4. Preheat olive oil in the frying pan. Cook onion, carrot and pepper in it for 4-5 minutes.
  5. Do not peel zucchini. Cut it into the pieces immediately. Peel several potatoes and cut them into cubes as well. Add these vegetables into the pan. Continue frying.
  6. Cut pepper into thin slices and add into the pan with fried with vegetables. Add baked eggplant.
  7. Finally, you`ll need to add spices. I prefer to add ground cilantro, pepper and salt to taste. Mix all the ingredients carefully. Slow down the fire and cover the pan with the lid. Stew vegetables for 5-10 minutes.
  8. Meanwhile you`ll need to mash fresh tomatoes. Put them into the deep bowl and add boiled water. Leave tomatoes for 1-2 minutes. Get rid of the skin and seeds. Mash tomatoes, using powerful blender.
  9. Add mashed tomatoes into the pan with fried vegetables. Boil everything quickly. Stew everything for 20 minutes. If the vegetables are too hard, you may continue cooking everything for 30 more minutes.

This stew should be neither too liquid nor too thick. Even vegans may east it for lunch or dinner as no meat is used while cooking. Serve everything in the deep bowl and enjoy the taste!
