Classical Pumpkin Soup
Pumpkin soup is one of the most popular autumn dishes. People all over the world cook it, using different recipes. In Italy, for example, cooks add rice, in Uzbekistan they prefer to add milk.
Here is classical recipe of the pumpkin cream-soup. Tender taste and being nutritious make this dish a perfect dinner. One more plus is that, this dish is really healthy. Try to cook it, you won`t regret!

First, peel pumpkin and carrot and cut them into big cubes.
Chop onion and garlic.
Melt butter in the frying pan and add olive oil. Fry onion and garlic for 3-4 minutes.
Add carrot, nutmeg and ginger. Fry everything for 2-3 minutes. Then add 3 tablespoons of water or vegetable broth. Cover your pan with the lid. Stew everything for 10 minutes. Carrot must be really soft at the end.
Now add pumpkin. Fry for 3-4 minutes and add more water or broth. Liquid should cover all the vegetables.
Cover the pan with the lid and stew everything for 30 minutes. Add salt and pepper to taste. Then strain ½ of water. Mash all the ingredients, using blender. If you need, add broth in order your soup not to be too thick.
Pour soup into the pan and boil. Add cream and heat everything one more time. This time your dish shouldn`t boil.
Serve this soup hot, decorated with sesame or pumpkin seeds. You may also add grated cheese or garlic bread. This soup is delicious, smooth and definitely worth trying!
