Classic Filipino Chicken Adobo


The history of delicious Filipino chicken adobo: It is literary a marinated chicken dish with a strong fragrant and juicy taste.

 This dish was invented long ago when there were neither freezers, or refrigerators. People faced the problem of storing meat. The people of the Philippines found out that a good way to prevent meat from spoiling is to soak it in a marinade made of  vinegar, garlic and salt.

 The recipe was slightly changed by the Spanish, who colonized the Philippines. They decided to use more spices. Nowadays Philippine adobo is cooked with black peppercorns, soy sauce and bay leaves.

  1. Take a large bowl and mix soy sauce with rice vinegar, oil and minced garlic. Add pepper and a half of the grated ginger.
  2. Finally put chicken drumsticks or tights into the bowl with marinade. Leave the poultry in the fridge for half an hour.
  3. Find a deep frying pan and put the marinated chicken into it. Cook it for 3 minutes on both sides. Transfer the fried chicken to a plate.
  4. Take a frying pan and add olive oil and the rest of the ginger. Cook everything for a minute. Add 0.5 cup of water, the rest of the marinade, slices of potato and carrot. Simmer everything for 40-50 minutes until all the vegetables are soft.
  5. If you want to make this sauce thicker, simmer it for an additional 5 minutes.
