Instructions:
  1. First you need to cook lemon curd. For cooking this creamy mass you need to use the juice of one lemon. But in fact, you may replace it with the juice of any other fruit you like.
  2. Put the pan on the fire and fill it with the ingredients. Grate zest of two lemons. Squeeze the juice. I recommend you to use about lemons to get a cup of juice.
  3. Mix zest and juice in the pan.
  4. Add 4 eggs.
  5. Cut cold butter into cubes and add them into the pot as well.
  6. Heat this mass, whisking everything slowly. Soon butter will melt and curd will become thicker.
  7. When the mass is thick enough and there are bubbles, you may strain it. It`s an important step. Keep in mind that there shouldn`t be the leftovers of the boiled whites.
  8. Cover the bowl with the plastic wrap and put it into the fridge.
  9. Now you need to cook sponge cake.
  10. Mix dry ingredients in the bowl. Combine the flour and baking powder.
  11. Take another bowl and whip soft butter with sugar in it. As it`s lemon cake, you may add all this sugar. The dough won`t be too sweet. Whip everything, using a mixer until there is a white mass in the bowl.
  12. Add 4 eggs one by one.
  13. There should be white mass in the bowl.
  14. Add 2-3 teaspoons of the lemon zest.
  15. Then you need to add yoghurt or sour cream.
  16. Add more flour.
  17. Pour milk into the bowl and whip everything well.
  18. Add the rest of the flour.
  19. There will be nice smooth dough in the bowl.
  20. Fill the form with the dough.
  21. Cook it in the oven preheated to 356 F for 30-40 minutes. Of course, you`ll need to check, whether the dough is ready, using a toothpick.
  22. When the sponge cake is ready, put it on the grid and leave to cool down.
  23. Cut both layers in two. Mash the leftovers. You`ll use these crumbs later for decoration.
  24. Cover them with the curd and form the cake. If you like, you may decorate it.
