  1. First, you need to cook a sponge cake. Whip eggs with sugar for 5-7 minutes.
  2. Take a separate bowl and mix cocoa with flour in it. Then you need to divide this mass. Add 3-4 tablespoons into the bowl with whipped eggs. Mix everything, using whisk. Then slowly add the rest of dry ingredients and make thick dough.
  3. Pour this dough into the form. I use form with a removable bottom. If you use it too, you won`t need to cover the bottom with baking paper or lubricate it with butter.
  4. Bake your sponge cake for 30-40 minutes at 356 degrees. Check whether the cake is ready using a toothpick before taking it out of the oven.
  5. As soon as you get it out of the oven, turn the form over and leave it to cool down. If you are sure that the cake is well baked, you do not need to turn the form over.
  6. Mix gelatine with boiled water in the bowl and leave it to cool down.
  7. Then mix yolks with sugar. As you`ll need only yolks, you may put whites into the plastic container and freeze them.
  8. Mix the rest of sugar with milk and heat this liquid. Keep in mind that it shouldn`t boil.
  9. Pour 2/3 of milk into the bowl with yolks and sugar. Then pour it again into the pan and boil everything, constantly stirring. The mass should be thick but not boiled.
  10. Take the pan off the fire and let it cool down. Stir it slowly for a minute. Then mix it with gelatine well. Add chocolate into the bowl and wait until it melts.
  11. The mass will be smooth. You need to whip it slowly with a whisk constantly.
  12. You also need to whip cream. Be careful for it not to be too thick. Add several tablespoons of sour cream into warm gelatine. Whip everything and slowly add the rest of cream into the bowl.
  13. Cut sponge cake into two parts. The bottom part should be smaller. As for the second part, you may freeze it or use for cooking another cake.
  14. Take the form and cover it with baking paper. Fix it. You may also use plastic wrap instead. In this case, your cake will look better.
  15. Cover the cake with mousse and put it into the fridge for 4 hours. If you have more time, leave it in the fridge for the whole night.
  16. In the morning you`ll need to take the cake out of the fridge. Get rid of baking paper and decorate this dessert with sugar powder, fresh strawberry and mint leaves.
