Chicken Salad with Strawberry and Spinach

 Combination of grilled chicken breasts, fresh  strawberry and crunchy spinach may seem to be weird but in fact, is really great. This  salad is great lunch idea for everyone. You can also use this salad salad - desc learn more...bowl to stuff tacos, tortillas or serve over omelets.

 You can enrich the taste of this dish, adding spring mix, fresh arugula or romaine. In this case, your lunch will be brighter and crisper. You can also replace strawberries with another berries and use goat cheese instead for feta as well.

Instructions:
  1. Start cooking this fresh salad by mixing fresh dressing. Whisk extra virgin olive oil with sugar, tarragon, salt, pepper and balsamic vinegar. Mix until this dressing is smooth enough.
  2. Set the bowl with this dressing aside and get down to cooking chicken breasts.
  3. Sprinkle them with the portion of whisked dressing, cover the bowl with poultry with plastic wrap and leave chicken in the fridge for 1-2 hours.
  4. Cover grill or grill frying pan with olive oil. Transfer chicken breasts to the grill and cook them for 3 minutes. Flip each one and cook for another 3 minutes.
  5. Reduce the heat and cook poultry for additional 20 minutes. Chicken breasts should be cooked through and very tender. Turn them over each 5 minutes.
  6. When you`re done, remove chicken from fire and leave to cool down for 5-10 minutes.
  7. Cut chicken into long thin slices.
  8. Prepare the rest of ingredients. Cut soft feta into cubes. Chop strawberries into large chunks.
  9. Cut avocado into thin half rings. Cut avocado in two pieces and take of the pit. Slice avocado as well.
  10. Put all the ingredients into large bowl. Add fresh spinach. Top with salad dressing. Mix everything carefully.

Serve fresh salad on the large plates. If you want to make lunch more nutritious, add tortillas or croutons. Bon Appetit!
