Chicken Risotto with Wild Mushrooms

  1. If you use frozen mushrooms, defrost them beforehand. If they are fresh, all you need is to wash them and cut into middle-sized pieces.
  2. Preheat the frying pan with the 1 tablespoon of the vegetable oil. Add mushrooms into this pan. Salt them and cook on the slow fire in the pan covered with the lid. You`ll need to stew mushrooms for about 10 minutes until they are soft.
  3. When there is no liquid in the pan, add butter, take off the lid and fry mushrooms for 2-3 minutes. Put these mushrooms into the bowl and leave it in the warm place.
  4. Chop onion and cook it in the frying pan until it`s golden-yellow. Peel garlic, cut it and add into the pan as well.
  5. Boil the rice until it`s half ready. Add it into the pan with the onion. Mix everything carefully.
  6. Slowly pour the broth into the pan.
  7. Cook everything until the mass is the pot gets thicker.
  8. Now you may add mushrooms and wine.
  9. Mix everything carefully, wait for 3-5 minutes and add chopped herbs.
  10. Grate cheese and add it into the pan right before the end of cooking.
