Chicken Noodle Soup. Traditional Dinner with Poultry

 Traditional homemade chicken soup is one of the easiest dishes you may cook with poultry. All the ingredients are simple and cheap, so this dish is both budget-friendly and great for those who only learn to cook.

Cooking amazing fragrant broth doesn`t take much time. You can use leftover chicken bones for this purpose.  Put them in the large pan together with 1 celery rib, 1 onion and 1 carrot. Add water. It should cover all the ingredients. Bring the liquid to boil, reduce the heat and simmer everything for 4 hours. Drain the liquid carefully. Now you have enough broth to cook delicious chicken soup.

 For cooking soup itself, we will use chicken thighs. This meat is tender and yummy. To make your soup flavorful don`t forget to add spices. Use bay leaves, chopped thyme and fresh chopped parsley a the end. You mat also add rosemary, onion powder and garlic powder.

Instructions:
  1. Take large frying pan and melt butter in it. Add chopped carrot, onion and celery. Fry everything, stirring constantly for 5 minutes. When the vegetables are soft, you can add the rest of ingredients.
  2. Add minced garlic, fresh thyme and bay leaves. Cook everything for one more minute.
  3. Pour in a portion of the broth. Simmer everything for several minutes.
  4. Add the rest of the broth into the pan. Transfer vegetables with the leftovers of the liquid into the pan as well. Add salt and pepper to taste.
  5. Now add chicken thighs. Water should cover them.
  6. Cook this soup with dark meat for 20-30 minutes. When meat is soft and your soup has fragrant rich taste, take chicken out of the pan.
  7. Now add egg noodles. Cook your soup for 5-10 minutes.
  8. In the meantime shred chicken carefully. Add it back into the pan. Add more spices if needed together with fresh chopped parsley.

There are several ways to change the taste of traditional chicken soup with noodles:

  •         Use the leftovers of grilled or roasted chicken. In this case, it will be easier to cook this soup. What is more this process will take less time.
  •         Like creamy soups? You can make this one creamy as well! All you need is to add 3-4 tablespoons of milk or even cream.
  •         We have also an interesting variation of this soup for those, who like Japanese food! Add 2-3 tablespoons of fish sauce into the pan while cooking this dish. While cooking this Japanese-style dish you may also replace butter with the same amount of sesame oil.
  •         Add more vegetables! You can use fresh cabbage, kale or broccoli.
  •         Finally, you can replace egg noodles with rice, quinoa or chopped potatoes.
