Chicken Enchiladas with Cheese


Chicken enchiladas are traditionally made in Mexica. Each family has a traditional recipe for this spicy meal. And, of course, this dish is very often served at most  parties and family dinners.

  1. To begin with, you’ll need to make a fragrant sauce. Peel the onion and garlic. Do the same with the chili pepper. Chop all the ingredients.
  2. Preheat the frying pan with the vegetable oil. Add the vegetables into the pan and sauté them for 10 minutes. Later you can add canned tomatoes. Add salt, sugar and black pepper into the pan. Stew everything for 10 minutes. Your sauce is ready!
  3. Preheat another pan and cook minced meat in it. Cook it for about 15 minutes. Now you can add the spices. Stir everything carefully and cook the minced meat for several more minutes.
  4. Grate the hard cheese on the coarse grater. Chop cilantro.
  5. Now let’s get down to forming the dish. Preheat the oven to 392 F. Fill the bottom of the tray with the sauce.
  6. For the enchiladas to be elastic, preheat tortillas in the microwave oven beforehand. Fill each tortilla with the minced meat and the mixture of cheese and herbs.
  7. Form a tight roll and put it into the tray with the sauce.
  8. Cover these rolls with the leftovers of the sauce. Add a thin layer of chopped cilantro and cheese.
  9. Bake this dish at 392 F for 15-20 minutes until the cheese melts.
