Hello, guys! Today we`ll cook cherry strudel with almond and cinnamon.
Summer is a great time to cook fresh desserts with cherry, so you should definitely try this pastry. It`s bright, fragrant and of course yummy.
Still, there are several moments you should keep in mind while cooking this dessert. First, you should have enough time when you`re going to cook it, as the dough should stay in warm place for 30-40 minutes. One more recommendation that it is interesting to mix cherries with rum, honey and cinnamon. Still, if you cook this dessert for kids, you may go on without alcohol. Moreover, of course you may replace it with any other drink.
I suggest you the list of ingredients for cooking one big strudel, but you may use it for making 4 small portions. In this case, you should expand the dough on the table, lubricated with vegetable oil. The dough for classical big strudel should be cooked on the wet towel.

Instructions:
  1. Wash cherries and get rid of pits. In winter you may use frozen berries.
  2. For cooking strudel, you may use fresh berries or even boil them for several minutes.
  3. Then you need to strain them. I prefer to boil cherries, as in this case there is less juice in the pie.
  4. Dust cherries with sugar and put the pan on the fire. When it boils, cook it for 2-4 minutes. Then take the pan off the oven. Leave it to cool for several minutes.
  5. Then add cinnamon, rum and honey into the pan. Mix everything well. You may not add it or replace it with any other alcohol drink.
  6. Mix everything well. If you do not boil cherries, simply mix them with rum, honey, cinnamon and sugar. Still, in this case your pastry will be “wet”.
  7. Now you need to cook the dough. If you do not have much time, cook it before working with cherries.
  8. Fill the bowl with water, salt and vegetable oil. Mix everything well.
  9. Take ½ of the flour and mix it with water.
  10. Make the dough. It should be soft and elastic at the end.
  11. If you need, add more flour.
  12. Form a round ball.
  13. Cover it with the plastic wrap and leave for 30-40 minutes in warm place.
  14. Meanwhile dry nuts in the oven or on the dry frying pan. Then grind them, using blender.
  15. If you`re planning to add crumbs, crush cookies.
  16. When the dough becomes bigger, it`s time to divide it into several parts. If you`re planning to make one big strudel, flatten the dough ball.
  17. Lubricate the table with vegetable oil and start flattening the dough.
  18. Try to make it as thin as possible.
  19. Form a square.
  20. Then expand it using your hands until it`s almost see-through.
  21. Be careful as it`s easy to damage this thin layer.
  22. Cover this layer of dough with breadcrumbs or crushed cookies. The edges should be empty.
  23. Then cover it with chopped almond. You may see the way I do it on the picture.
  24. Now make the layer of cherries. If you boiled them, strain berries beforehand.
  25. You may place them in any order.
  26. When the dough is covered with cherries, it`s time to roll it.
  27. First, roll the edges and lubricate them with melted butter.
  28. Slowly roll the dough from the bottom. You also need to lubricate it with butter.
  29. When you`ve formed the roll, lubricate it with butter from all sides. Form your strudel. You need to be careful, not to tear the thin layer of dough. If you made big strudel and used wet towel for it, it will be easier to put it on the tray. The top layer shouldn`t be covered with cherries. You`ll need to cover your strudel with butter several more times while cooking. Put the tray into the oven preheated to 392 degrees. Bake it at 356 degrees for 40-45 minutes. Take strudel from the oven and lubricate it with butter again. Dust it with sugar powder. This pastry may be served with cherry syrup or jam.

Still, classical variant is the combination of strudel and several balls of ice-cream on the plate.

By the way, you may cook cherry syrup by yourself. Use water that is left in the pan after boiling cherries. It`s very tasty!
