Cheesecake With Strawberry


This is one of the best recipes of cheesecakes. It is fragrant, tender and easy to make. You may cook it for a festive meal. This dessert will become one of the most favourite dishes in ration of kids and adults.
In general, there are about 1000 recipes of this dessert. It`s considered to be found in Greece. Sportsmen were treated with it during Olympic Games. It became one of the traditional wedding delicacies in Italy and Europe.
For a long period of time the recipe remained unchanged. Still Americans wanted to change it, making something unusual out of this dessert. Cooks tried to use hard cheeses in the recipes. They were grated, of course. Then they tried to use cottage cheese, ricotta (Italian cheese, made of whey), Havarti (soft Dutch cheese). Havarti and ricotta are rather expensive. In 1872 William Laurence invented soft cream cheese. Actually, he tried to copy French recipe of the cheese. Still, he managed to create something new. Since then, Philadelphia cheese is produced. In 1912 James Craft invented new way of pasteurisation cheese and Arnold Ruben managed to make cheesecakes popular in 1929.

  1. Whip eggs with sugar for 10 minutes. The mass should be thick, but tender. Sift the flour 3 times. Make the dough. The more carefully you work with the flour, the more tender your sponge cake will be. Finally, you need to add melted butter into the dough.
  2. Cover the bottom with baking paper and lubricate it with butter. Bake sponge cake for 15-20 minutes at 356 degrees. Then leave it to cool down.
  3. Make cheese layer. Mix eggs with sugar, using fork. Do not whip this tender mass.
  4. Add cottage cheese, starch and vanilla. I suggest you to use cottage cheese instead of Philadelphia, as it is cheaper. Rub it through the sieve and you`ll have the right consistence. It`s important to choose cheese with high percent of fat content. Only in this case the structure of cream cheese will be smooth enough.
  5. Cover sponge cake with slices of fresh strawberry.
  6. Pour cream mass on the top of it. Bake cake for 5 minutes at 356 degrees. Then lower the temperature and continue baking for 40-50 minutes.
  7. Now it`s time to decorate the cake. Mix sour cream with sugar and cover the cake with this mass.
  8. Now you need to bake it again. Cook it for 5 minutes at 356 degrees. Leave it in the oven for several minutes. Then you need to put it into the fridge for the whole night.
  9. In the morning, you need to smooth the edges with the knife and decorate the cake.
