Classical cheesecake with semolina and raisins

As this cheesecake is cooked with raisins, you do not need to add sugar. Do not lower the amount of semolina added. Part of it is used for covering baking form for the dish not to stick.

Ingredients:

· Cottage cheese – 2 and ¼ cup
· Eggs – 3 pieces
· Semolina – 5 tbsp.
· Raisins – ½ cup
· Sugar – 3 tbsp.
· Sour cream – 2 tbsp.
· Butter – 2 tbsp.

1. You may simply mix cottage cheese and raisins. However, the dish will be much tastier, if you prepare raisins beforehand. Put them into the bowl, cover with warm water and leave for several minutes.
2. Prepare cottage cheese. It must be very smooth. You may mash it, using blender, for it not to be lumpy. Add sour cream, sugar and 3 tablespoons of semolina.
3. Separate yolks and eggs. Add yolks into the bowl with cheese. Mix everything well. Add raisins and mix all the ingredients one more time. Whip whites, creating thick froth. Add it into the bowl as well.
4. Lubricate the form with butter. Do not melt it. Dust the form with semolina. Put cheese mass into the form.
5. Bake cheesecake at 356 degrees for 35 minutes. If the layer is too thin, cook it for 20-25 minutes.
This dish will be much tastier if you add a pinch of salt into the dough. You may also add vanilla. It is tasteless, but fragrant.

Quick cheesecake with raisins

If you do not want to waste your time, here is the recipe for you. This cheesecake may be cooked for breakfast. You`ll waste no more than 15 minutes on cooking this dish.

Ingredients:

· Semolina – 3/8 cup
· Cottage cheese – 1 and ½ cup
· Eggs – 2 pieces
· Sugar – ¼ cup
· Raisins – 1 tbsp.

1. Break eggs into the bowl. Add sugar and whip everything.
2. Add cottage cheese. If it`s dry, you may add sour cream or pour milk/yoghurt into the bowl. Add semolina and mix all the ingredients.
3. Finally, add washed raisins. You may add mixture of dry fruits. Mix this mass and put it into the silicone form. You may cook muffins in smaller forms instead.
4. Cook it in the microwave oven at 700 W. If you are in a hurry, cook it at 800 W for 5 minutes. When the process of cooking is finished, wait for 1-2 minutes before taking cheesecake out of the oven.
5. Then put it into the plate, cover with syrup or jam.
You may use plastic container instead of the form. Lubricate it with butter and dust with the thin layer of semolina.

 

Aerial cheesecake with raisins

 

This cheesecake is really aerial and tender. Such a fragrant dish may be a perfect dessert.

Ingredients:

· Milk – 125 m.
· Eggs – 3 pieces
· Sugar – 4 tbsp.
· Semolina – ¼ cup
· Baking powder – ½ tsp.
· Cottage cheese – 2 and ¼ cups
· Raisins – 3 tsp.
· Butter.

1. Heat milk. It should be warm, not hot. Mix it with semolina and leave it for 20 minutes.
2. Mix eggs with cottage cheese. Add sugar and mix everything, using mixer. Then add mashed raisins. Finally, you need to add semolina and baking powder.
3. Your dough will be liquid at this step. Pour it into the form, lubricated with butter and bake your cheesecake for 25 minutes at 338-356 degrees.
You may use the leftovers of boiled semolina instead of dry ingredient. In this case, you will need to add less milk.

 

Cheesecake with semolina and raisins (without eggs)

 

If you have no eggs, you still may cook delicious cheesecake. This dish will be tender and light. If you want to cook bigger cheesecake, use bigger portion of each ingredient. You may cook this pastry in small forms.

Ingredients:

· Raisins – 3 tbsp.
· Cottage cheese – 1 and ¼ cup
· Semolina – 4 tbsp.
· Sugar – ¼ cup
· Yoghurt – 130 ml.

1. Mix yoghurt with semolina. Leave everything for 20 minutes. In this case your dessert will be aerial.
2. Wash raisins and put into the bowl with warm water. Leave it for several minutes as well.
3. Rub cheese or mash it, using a fork. Add sugar. If you`re on a diet, cook it without sugar.
4. In several minutes mix cottage cheese with semolina. Dry raisins and add them into the bowl as well. Mix all these ingredients. Put this mass into the form. Use silicone form or lubricate the tray with butter and dust it with breadcrumbs or semolina.
5. Bake your cheesecake at 30 minutes for 356 degrees.
Do not change the temperature, even if you want to cook the dish quicker. In this case, cheesecake will be wet inside.

Cottage cheese with raisins and bananas

For cooking fragrant and delicious cheesecake, you need to buy ripe bananas. They shouldn`t be dark, or covered with spots. I recommend you to add cinnamon and zest into the bowl. However, you may replace it with vanilla.

Ingredients:

· Eggs – 2 pieces
· Cinnamon – 0,2 tsp.
· Cottage cheese – 2 and ¼ cup
· Raisins – 2 tbsp.
· Sugar – 1,5 tsp (or less)
· Banana – 2 pieces
· Zest – 1 tsp.
· Sour cream – 2 tbsp.
· Semolina – 2 tbsp.

Cottage cheese with raisins and bananas. Recipe

1. Separate yolks and eggs. Whip eggs with sugar. Mash cottage cheese and mix it with yolks. Add sour cream and semolina. Mix all these ingredients and leave everything for 15 minutes.
2. Wash raisins. Prepare cinnamon and zest. Peel bananas and cut them into circles. Add ½ of fruit into the bowl with cottage cheese. Then add fragrant components. Mix everything.
3. Whip whites well. Mix them with cottage cheese. Lubricate the form with butter. Put cottage mass into it. Cover with the layer of sliced bananas. Fruit may be used for decoration.
4. Put cheesecake into preheated oven. Bake it at 338 degrees for 20 minutes. Then change the temperature to 392 degrees and cook your dessert until there is a golden crunch. You may also cook it in the slow cooker. In this case you only need to pour the dough into the bowl, cover it with bananas and start cooking.
If you don`t want to use semolina, you may replace it with the flour. Still, this dish won`t be aerial in this case.
