  1. Break eggs. Mix them in the bowl with honey and yoghurt. Whip everything until smooth.
  2. Sift the flour through the sieve.
  3. Add ½ of the flour into the egg mass. Then add the rest of the flour. It needs to be done for the dough not to be lumpy.
  4. Add cinnamon and vegetable oil. Mix everything.
  5. Peel carrot and grate. Squeeze juice. Crush nuts. Add these ingredients into the bowl with the dough. Leave it for 15 minutes.
  6. Fill silicone forms with the sough. Forms shouldn`t be full as the dough will grow in size while cooking.
  7. Preheat the oven to 338 degrees. Bake your muffins for 40-50 minutes. You may check whether they are ready, using a toothpick.

Great recipe, very yummy! Any suggestions for other ways to use the left over Miso paste? Marinade? Make into another type of sauce? Ideas??? It’s too good to not use up!
