Traditionally people use tomatoes, zucchini and red bell pepper. However, you can add more interesting summer vegetables while making this dish.

Instructions:
  1. First, wash all the vegetables carefully. Cut of the edges of each zucchini. Dice them carefully.
  2. Now cut tomatoes and red bell peppers into big chunks.
  3. Add tomatoes to the pan as well as sugar. Salt everything to taste.
  4. Cook tomatoes for 10 minutes. Now add vegetable oil, zucchini and red bell pepper. Saute everything for additional 10 minutes.
  5. Add minced garlic. If you like, you can also add dry herbs to taste. However that is not necessary. Pour in vinegar and cook everything for 10 more minutes.

When you`re done, transfer this winter salad to sterilized jars. Process everything in water canner for 20 additional minutes.

You can serve this delicious salad with rice, baked or mashed potatoes or even with meat. You`ll love the result. Bon Appetit!
