Instructions:
  1. Whisk 2 eggs and season them with salt and pepper. Set the bowl with fresh eggs aside. Preheat the frying pan with the thick bottom. Add 2 tablespoons of olive oil. Chop onion and sauté it slowly for a minute until it`s soft.
  2. Add sliced cherry tomatoes. Continue cooking everything for 2 more minutes. Stir from time to time.
  3. Now you can add prepared eggs to the vegetables. Mash them using a wooden spatula. In 1-2 minutes add mashed feta cheese and fresh parsley. Cook everything for 30 more seconds.
  4. Top everything with additional portion of fresh olive oil.
  5. Serve this breakfast meal immediately.
