Baked Lamb Shank. The Secrets of Cooking Perfect Meat

Lamb shank is an exquisite Eastern dish which you can easily cook at home. This part of the lamb is very lean. That’s why it’s a great option if you’re unsure whether you like lamb or not. It`s very attractive, fragrant and yummy.

Making slow cooked lamb is rather easy.

  •         To begin with, choose tender and high-quality meat. It should be light and there shouldn`t be any traces of yellow fat. If the meat has a dark colour, you may use it only for making mincemeat.
  •         Before you start cooking the lamb shank wash it carefully with hot water and don`t forget to get rid of the extra fat.
  •         For the meat to be juicy, use tinfoil.
  •         You may choose various types of spices and herbs. If you like, add fresh garnish or baked vegetables.
  •         When you`re done, do not be in a hurry. Let the lamb sit for 20 minutes. This will allow the dish to become more tender.
  •         You can cut the meat into thin slices before serving it.

Now that you know the best way to cook lamb shanks, let’s turn our focus to the marinade. It’s very important to choose the right combination of ingredients. There are several time-tested variants. Lamb tastes better when you cook it with mustard, paprika, ginger, lemon juice, thyme and oregano. It’s best to use dry herbs for rubbing the meat.

Here are several interesting recipes for marinades.

  •         Mix thyme with olive oil, rosemary, tomatoes, parsley, cilantro and onion. Mash all these ingredients together, using a powerful blender. Leave the meat in this marinade for 5-12 minutes.
  •         Mix a cup of the vegetable oil with lemon juice, parsley and bay leaves. Add slices of carrot and chopped onion. Pour 200 ml of white wine. Mix everything carefully.
  •         Cut 2 onions into thin circles. Add 5 chopped cloves of garlic. Pour olive oil and add 3 tbsp of vinegar. Add rosemary, thyme, salt and pepper. Put the lamb into the bowl with this marinade for 12 hours.
  •         Add 500 ml of water into a bowl with sugar. Add 2 cloves of chopped garlic. Cut a lemon into slices. Add them into a bowl together with fresh herbs and salt. Boil everything for 20 minutes and put the lamb shank into this liquid for 6 hours.
  •         Add 2 chopped onions, parsley, cilantro and basil into a bowl with low-fat yoghurt. Mix meat with this fragrant mass and leave the lamb in the bowl of marinade for 10 hours.
  •         Mix 250 ml of yoghurt with 2 cloves of garlic. Add 2 tsp of mint leaves, red pepper and paprika. Put the shank into the bowl and leave the meat to marinade for 12 hours.

  1. Wash the lamb carefully. Rub it with the salt and pepper. Cook the sauce.
  2. Mix olive oil with the cilantro and mashed garlic. Add chopped rosemary.
  3. Cover the lamb shank with the sauce and leave it in the fridge for 1-3 hours.
  4. Take the meat out of the fridge and wrap it in tinfoil. At this point, the meat will be juicy enough. Bake the dish in a preheated oven for 1.5 hours. Then open the tinfoil and continue baking for one more hour to allow for the dish to be covered in a crunchy crust.
