Lamington is amazing Australian cake. The legend says that the recipe was invented by one cook, who didn`t know what to cook for his sudden quests. Sir Lamington didn`t like it. Still, the cook saved this recipe and improved it.

Instructions:
  1. Take a form with the thick bottom and the edges. Break 8 eggs and mix them with the sugar in this bowl. Preheat everything on the water bath. Add hot water into the pan. Put the form with whipped eggs on the top of it.
  2. Take the pan off the fire and continue whipping this mass on the slow speed. It will take 10-12 minutes.
  3. Sift the flour through the sieve slowly. Divide it into 3 portions. Add each portion slowly and carefully.
  4. Pour melted butter and mix all the ingredients, using a silicone spatula.
  5. Pour the dough into the square form. Don`t forget to cover the bottom of this form with the baking paper.
  6. Cook your dessert in the oven preheated to 392 F. Cook the cake for 20-25 minutes. Then take the tray with the sponge cake out of the form. Put it on the grid and leave it to cool down.
  7. Now you may get down to cooking the topping. Preheat the fat cream slowly. Pour it into the bowl with the dark chocolate. When the chocolate melts, mix everything one more time. The liquid should be smooth.
  8. Cut the sponge cake into pieces and start dipping them in the chocolate mass. Later roll each slice in the coconut shaving.

Put all the slices on the tray and leave them for an hour. Now you may either serve this tender Australian dessert or put it into the container and leave for 3-4 days. Bon Appetite!
