American Diabetic Cookies with Peanut Butter

  1. Start baking this diabetic dessert by preheating the oven to 350 F. Cover a baking tray with parchment.
  2. Fill the bowl with erythritol and beat it carefully for several minutes. Set the bowl aside.
  3. Whisk an egg and add it into the bowl as well together with vanilla and baking soda. Stir in peanut butter. Keep in mind that it definitely should be sugar-free. The best choice is natural peanut butter.
  4. Mix this dough until it is smooth enough.
  5. Divide the dough into small balls. Flatten each one and top it with the fork to decorate it with strips.
  6. Transfer all the cookies to the tray and bake them for 11-14 minutes.
  7. Remove the tray from the oven and leave the cookies to cool down. It will take about 25 minutes. Now you can eat them.
