Eggplant rolls

Here is the first and the simplest recipe of rolls.

Ingredients:

· Eggplant – 2 pieces (middle-sized)
· Cottage cheese – 1 cup
· Garlic – 1 clove
· Hard cheese – ½ cup
· Parsley – 1 beam
· Vegetable oil – for frying
· Salt – to taste
· Pepper – to taste.

Eggplant rolls. Recipe

1. Cut eggplant into thin slices.
2. Salt these slices and leave for several minutes. Then get rid of extra water, using paper towel.
3. Lubricate each slice with oil, using basting brush. In this case eggplants won`t be too fat.
4. Fry slices on the dry frying pan.
5. Put fried slices in the paper towel.
6. Chop garlic. Add salt into this garlic mass.
7. Chop parsley.
8. Mix cottage cheese with greens and grated cheese.
9. Salt and pepper everything to taste.
10. Put one spoon of cheese mass on each slice of eggplant.
11. Form a roll and stick it with the toothpick.

Eggplant rolls with cream cheese

This is one more creative snack, stuffed with cream cheese and nuts.

Ingredients:

· Eggplants – 2 pieces
· Vegetable oil – ½ cup
· Hard cheese – 1 cup
· Cottage cheese – ¾ cup
· Garlic – 3-5 cloves
· Walnuts – ¼ cup
· Greens (cilantro, basil, parsley) – 1 beam
· Paprika – 1 pinch.

1. Wash eggplants and cut them into long thin stripes. Salt everything and leave for 5 minutes. Then wash these slices again and dry using paper towel.
2. Preheat vegetable oil in the frying pan. Fry these slices until they have crunchy crust. Then put these slices on the grid in order to get rid of extra oil. Put them on the paper towel.
3. Now it`s time to cook the stuffing. Fill the bowl with the mixture of grated and cottage cheeses. Add chopped garlic, greens and walnuts. Mix everything well and add salt, pepper, sweet paprika.
4. Fill eggplant slices with this yummy stuffing and form rolls.

Eggplant rolls with vegetables

Ingredients:

· Eggplant (big) – 1 piece
· Carrot – 6 pieces
· Onion – 2 pieces
· Tomato – 2 pieces
· Garlic – 3-4 cloves
· Soy sauce – 2 tbsp.
· Salt – to taste
· Spices (thyme, paprika, black pepper) – to taste
· Vegetable oil.

1. Wash and peel all the vegetables. Cut eggplant into thin slices. Salt them and leave for several minutes. This will help to get rid of the bitter taste. Meanwhile cut onion into cubes and preheat frying pan
2. Lubricate pan with vegetable oil and fry eggplants from both sides. When they are ready turn the fire off and leave veggies in the pan. This will help to make them softer.
3. Fry onion until it`s golden-yellow. If you add salt beforehand, your onion won`t burn.
4. While onion is on the fire, grate carrot and tomatoes on the coarse grater.
5. Add carrot into the plate with onion. Salt this mass and mix everything. Stew until vegetables are soft.
6. Add tomatoes into the pan, mix all the ingredients until there are no liquid.
7. Ground thyme, paprika and pepper in the mortar.
8. Pour soy sauce into the vegetable mass. Add spices and chopped garlic. Mix everything well; turn the fire off and let this stew to cool down.
9. Fill eggplant slices with vegetable mass.

Eggplant rolls with walnuts

This is a nutritious snack for everyone.

Ingredients:

· Walnuts – 1 cup
· Cilantro – 1 beam
· Dill – 1 beam
· Onion ¼ piece
· Garlic – 2 cloves
· Salt – 1 tsp.
· Wine vinegar – 2 drops
· Khmeli suneli – 1 tsp.
· Eggplants – 4 cups
· Olive oil – 20 ml,.
· Pomegranate (seeds) – 1 tbsp.

1. Beat walnuts up, using a blender. Add cilantro, dill, onion and garlic. Add salt, wine vinegar and khmeli suneli into the bowl. If the mass is too thick, add a small amount of water.
2. Slice eggplants on the frying pan, lubricated with oil. Then put these slices on the paper towel.
3. Fill these slices with walnut mass and form rolls.
Decorate rolls with pomegranate seeds before serving. This snack is very delicious!

 

Eggplant rolls with meat

If you want to add meat into your diet, cook eggplants with chicken!

Ingredients:

· Chicken fillet – 1 piece
· Eggplant – 1 piece
· Carrot – 1 piece
· Greens (parsley) – to taste
· Vegetable oil – for frying
· Sesame seeds – to taste
· Salt – to taste.

1. Mash chicken fillet in the blender.
2. Add grated carrot into the bowl and mix everything well. If you like, you may add mashed garlic.
3. Slice eggplant into thin pieces.
4. Put them into the bowl with salty water in order to get rid of bitter taste. Fry these slices on the pan, lubricated with vegetable oil. Put these slices on the paper towel, trying to get rid of extra fat.
5. Cover these slices with one tablespoon of stuffing and add chopped parsley.
6. Form rolls.
7. Put them on the tray, covered with baking paper. Dust these rolls with sesame seeds. Bake them at 374 degrees for 20 minutes.
Now our rolls are ready! Decorate them with chopped greens and serve to table.

Eggplant rolls with spinach

This is a healthy variant of traditional eggplant rolls. Even if you`re on a diet, you may eat such a dish.

Ingredients:

· Spinach (for stuffing and for the sauce) – ½ cup
· Eggplant – 1 piece
· Cream – 1-2 tbsp.
· Adjika (green and red) – ½ tsp.
· Onion – ¼ piece
· Cilantro – 1-3 sprigs
· Vegetable oil
· Salt and spices.

Eggplant rolls with spinach. Recipe

1. First, chop cilantro and onion. Add chopped spinach.
2. Add adjika, salt and spices.
3. Slice eggplant. Fry it on the pan, lubricated with the oil until it`s soft.
4. Make sauce, mixing chopped spinach and two types of adjika.
5. Salt this sauce and add spices. Add cream and mix everything well.
6. Put the sauce into the plate.
7. Put stuffing in the middle of each vegetable slice.
8. Form rolls and decorate them with chops.
